Ingredients
1/2 teaspoon kosher salt
1 large egg
1 teaspoon xanthan gum
1 tablespoon apple cider vinegar
2 tablespoons water
2 teaspoon apple cider vinegar
3 1/2 teaspoons baking powder
20g whey protein isolate
21g coconut flour
63g golden flaxseed meal, neatly ground
77g coconut cream
96g almond flour

Instructions
1. Heat the oven up to 450°F then use parchment paper to line a baking sheet.
2. With a medium sized mixing bowl, add in the coconut cream, eggs, water, apple cider vinegar then whisk together until well mixed then set aside.
3. Add the flaxseed meal, almond flour, whey protein, coconut flour, xanthan gum, baking powder and salt into a food processor then process until well incorporated.
4. Add the butter into the processor and pulse a few times until pea-sized then pour in the cream mixture, egg and pulse until combined.
5. Divide the dough into 6 even sizes then arrange on the baking tray then rub all over with the melted butter.
6. Place the baking sheet into the oven and bake until deep golden for 15-20 minutes then allow to cool down.
7. Serve and enjoy or store at room temperature for 3-4 days.
