Gluten Free Tortillas

Ingredients

1/4 teaspoon kosher salt, as desired

1 slightly beaten egg

1 teaspoon baking powder

2 teaspoons xanthan gum

2 teaspoons apple cider vinegar

3 teaspoons water

24g coconut flour

96g almond flour

Instructions

1. Use a food processor to pulse the coconut flour, almond flour, baking powder, xanthan gum and salt.

2. Pour the apple cider vinegar into the food processor and pulse then add in the egg, water and process until the dough turns into a ball.

3. Use a cling film to wrap the dough then knead it for a minute or two then allow to rest for 10 minutes.

4. Heat the skillet up until hot then break divide the dough 8 1" balls then place between two parchment paper and roll out with a rolling pin till each one is 5" wide in diameter.

5. Arrange the rolled out dough in the skillet and cook for 3-6 seconds over medium heat then flip over and cook again until slightly golden for 30-40 seconds.

6. Serve and enjoy or keep warm until ready to devour.
