Ingredients
for the dough
1/4 teaspoon kosher salt, or to taste
1 egg slightly beaten
2 teaspoons xanthan gum
2 teaspoons baking powder
2 teaspoons apple cider vinegar
5 teaspoons water, as desired
24g coconut flour
96g almond flour
for the toppings
mozzarella cheese
pepperoni or salami
fresh basil
Instructions
for the dough
1. Use a food processor to process the coconut flour, almond flour, baking powder, xantham gum and salt until thoroughly combined.
2. Add the apple cider vinegar into the processor and pulse until evenly distributed then pour in the egg, water and continue to process until a ball is been formed.
3. Use a plastic wrap to wrap the dough then knead together through the wrap for a minute or two then allow to sit for about 5 minutes.
4. Heat the oven up to 350°F then line a baking sheet with parchment paper.
5. Evenly divide the dough into 6 portions then arrange on the baking sheet.
6. Place the baking sheet into the oven and bake for 2 minutes until blistered then reduce the heat to a low, flip the crust and garnish with the toppings cover, and bake until desired doneness is reached.
7. Serve and enjoy.
