Cowboy Beans

Traditional baked beans are not such a healthy idea. This tasty recipe puts a healthy spin on an old favorite.

Ingredients

1 pound 90 percent lean ground turkey

1 white onion, diced

1 bell pepper, diced

28 ounces vegetarian baked beans

14-ounce can kidney beans

½ cup mushrooms, sliced

¼ cup Splenda brown sugar

¾ cup low-sodium ketchup

1 teaspoon chili powder

1. Coat a skillet with nonstick spray. Brown turkey, onion, and pepper in skillet on medium-high heat until thoroughly cooked.

2. Add all ingredients to a slow cooker and cook for 3 to 4 hours.

Healthy Mushrooms

Mushrooms are high in fiber and protein and provide vitamins such as thiamine, riboflavin, and iron. Mushrooms provide a lot of other nutrients as well; they are particularly high in phosphorus and potassium.
