Kale & Feta Frittatas
Crispy kale, fluffy eggs (kept light by lowering the temperature during the cooking process), and creamy feta make this breakfast a morning home run.
1 cup kale, chopped
1 tsp. olive oil
4 large eggs, beaten
2 TB. water
Pinch of kosher salt
3 TB. crumbled feta
1. Preheat the air fryer to 360°F.
2. Spray the air fryer baking pan with nonstick cooking spray, then place the kale in the pan, drizzle with the olive oil, and cook for 3 minutes.
3. While the kale cooks, whisk together the eggs, water, and kosher salt in a large bowl.
4. Pause the fryer to pour the eggs into the pan and sprinkle the feta on top. Reduce the heat to 300°F and cook for 8 more minutes.
5. Remove the frittatta from the fryer and allow to cool in the pan on a wire rack for 5 minutes before cutting and serving.
