Spinach & Tomato Egg White Cup

Enjoy this light breakfast on a busy weekday or during a lazy weekend, especially because it offers a protein boost in just 40 calories!

2 egg whites, beaten

2 TB. tomato, chopped

2 TB. spinach, chopped

Pinch of kosher salt

Red pepper flakes (optional)

1. Preheat the air fryer to 300°F.

2. Spray a 3-inch ramekin with nonstick cooking spray, then combine the egg whites, tomato, spinach, kosher salt, and red pepper flakes (if using) in the ramekin.

3. Place the ramekin in the air fryer basket and cook for 10 minutes or until the eggs have set.

4. Remove the ramekin from the fryer and allow to cool on a wire rack for 5 minutes before serving.
