Classic Home Fries

Home fries are a diner favorite but are typically cooked in a vat of grease. This version lets the potatoes’ flavor and nutrition come through—without all that fat.

1 lb. small red potatoes, diced

2 tsp. olive oil

14 cup yellow onion, finely chopped

14 tsp. kosher salt

14 tsp. freshly ground black pepper

1. Preheat the air fryer to 360°F.

2. In a medium bowl, toss the red potatoes and olive oil, then add the onion, kosher salt, and black pepper, tossing again to coat.

3. Spray the fryer basket with nonstick cooking spray, then place the mixture in the basket and cook for 20 minutes or until golden brown, pausing the fryer every 5 minutes to shake the basket.

4. Remove the fries from the fryer, place on a plate lined with a paper towel, and allow to cool for 5 minutes before serving.
