Huevos Rancheros
Homemade corn tortillas are the secret to amazing “ranchers eggs.” Cooking them in the air fryer will make them crispy and delicious—without all the fat.
4 large eggs
1⁄4 tsp. kosher salt
1⁄4 cup masa harina (corn flour)
1 tsp. olive oil
1⁄4 cup warm water
1⁄2 cup salsa
1⁄4 cup crumbled queso fresco or feta cheese
1. Preheat the air fryer to 330°F with the air fryer baking pan in the basket.
2. Crack the eggs into the pan, season with the kosher salt, and cook for 3 minutes. Pause the fryer, gently scramble the eggs, and cook for 2 more minutes. Remove the eggs from the fryer, keeping the fryer on, and set the eggs aside to slightly cool. (Clean the baking pan before making the tortillas.)
3. Preheat the air fryer to 390°F.
4. In a medium bowl, combine the masa harina, olive oil, and 1⁄4 teaspoon of kosher salt by hand, then slowly pour in the water, stirring until a soft dough forms.
5. Divide the dough into 4 equal balls, then place each ball between 2 pieces of parchment paper and use a pie plate or a rolling pin to flatten the dough.
6. Spray the air fryer baking pan with nonstick cooking spray, then place one flattened tortilla in the pan and cook for 5 minutes. Repeat this process with the remaining tortillas.
7. Remove the tortillas from the fryer and place on a serving plate, then top each tortilla with the scrambled eggs, salsa, and cheese before serving.
