Bacon, Egg & Cheese Quesadilla
Enjoy this Mexican spin on breakfast! The air fryer quickly melts the cheese and puffs the tortilla, making for a mouthwatering grab-and-go meal.
1 large egg
1⁄8 tsp. kosher salt
1 eight-inch whole wheat tortilla
1⁄4 cup shredded cheddar cheese
1 slice cooked bacon, chopped
1. Preheat the air fryer to 360°F with the air fryer baking pan in the fryer basket.
2. Pour the egg into the pan and season with the kosher salt. Cook for 3 minutes, then pause the fryer, gently scramble the egg, and cook for 2 more minutes.
3. Remove the egg from the fryer, keeping the fryer on, and set the egg aside to slightly cool.
4. Spray the fryer basket with nonstick cooking spray, then layer the cooked egg, shredded cheddar cheese, and bacon on the tortilla. Fold in half, place in the basket, and cook for 5 minutes.
5. Remove the quesadilla from the fryer and allow to cool on a wire rack for 2–3 minutes before serving.
