Eggplant Parmesan
Give this Italian classic a reboot! Using part-skim cheeses saves hundreds of calories, and a crunchy topping takes the place of layers of fried eggplant.
1 small eggplant, peeled and thinly sliced
1⁄2 cup marinara sauce
1⁄2 cup shredded part-skim mozzarella cheese
1⁄2 cup part-skim ricotta cheese
2 TB. panko breadcrumbs
1. Preheat the air fryer to 330°F.
2. Spray the air fryer baking pan with nonstick cooking spray, then place the eggplant, marinara sauce, and mozzarella and rocotta cheeses in layers, finishing with a cheese layer, then sprinkle the panko breadcrumbs on top. Cook for 12 minutes or until the cheeses melt and bubble.
3. Remove the eggplant parmesan from the fryer and allow to cool in the pan on a wire rack for 10 minutes before cutting and serving.
