Lemon & Basil Crab Cakes
You don’t need to make a trip to a fancy restaurant for crab cakes. You can make this decadent seafood treat in the air fryer with less fat—and fewer calories.
8 oz. jumbo lump crabmeat
1 slice multigrain bread, torn into pieces
2 TB. low-fat milk
1 large egg, beaten
2 TB. grated yellow onion
1 tsp. Dijon mustard
1 tsp. lemon zest
2 TB. basil, chopped
1⁄4 tsp. kosher salt
1⁄4 tsp. freshly ground black pepper
Lemon wedges (for serving)
1. Preheat the air fryer to 360°F.
2. Place the crabmeat in a small bowl to check for any shell pieces.
3. In a medium bowl, use a fork to combine the multigrain bread, low-fat milk, egg, onion, Dijon mustard, lemon zest, basil, kosher salt, black pepper, and crabmeat. Form the crab mixture into 4 cakes and spray each with nonstick cooking spray.
4. Spray the fryer basket with nonstick cooking spray, then place 2 cakes in the basket and cook for 5–8 minutes or until golden brown. Repeat this process with the remaining cakes.
5. Remove the crab cakes from the fryer and place on a wire rack. Serve warm with the lemon wedges.
