BBQ Wontons
This air fryer take on an Asian classic is a fabulous way to repurpose leftover chicken. Use a box grater to grate the veggies for a more delicate texture.
2 TB. carrots, grated
2 TB. zucchini, grated
1⁄4 cup skinless chicken, cooked and finely diced
1 TB. pickled jalapeños, finely chopped
3 TB. cream cheese, softened
2 tsp. BBQ sauce
20 wonton wrappers
1 TB. canola oil
1. Preheat the air fryer to 390°F.
2. Wrap the grated carrots and zucchini in a paper towel and squeeze out any excess liquid.
3. In a large bowl, combine the carrots, zucchini, chicken, jalapeños, cream cheese, and BBQ sauce.
4. Place a tablespoon of the filling in the center of a wonton wrapper. Apply a small amount of water along the edges of the wrapper to help seal it, then fold to form a triangle. (If the wrappers are coated with flour, place the filling on the floured side.)
5. Repeat this process with the remaining wontons and place on a plate, covering with a damp paper towel. Before cooking, brush each with a little canola oil.
6. Spray the air fryer baking pan with nonstick cooking spray, then place 5 wontons in the pan and cook for 4 minutes or until golden brown. Repeat this process with the remaining wontons.
7. Remove the wontons from the fryer and allow to cool on a wire rack for 5 minutes before serving.
