Vegetable Spring Rolls
These savory spring rolls are a lighter and tastier alternative to traditional deep-fried spring rolls, which can be loaded with deep-fried calories and fat.
1 TB. olive oil, divided
2 cups shredded cabbage
1 cup baby portobello mushrooms, chopped
1 tsp. reduced-sodium soy sauce
4 egg roll wrappers
1. Preheat the air fryer to 360°F.
2. Place 1 teaspoon of olive oil in a small skillet and heat on medium–high, then add the cabbage, baby portobello mushrooms, and soy sauce. Sauté for 2 minutes.
3. Place 2 tablespoons of filling in the center of an egg roll wrapper. Apply a small amount of water along the edges to help seal the wrapper, then fold in the sides and roll lengthwise. Repeat this process with the remaining wrappers, then brush the wrappers with the remaining 2 teaspoons of olive oil.
4. Spray the fryer basket with nonstick cooking spray, then place 2 rolls in the basket and cook for 5–7 minutes or until golden brown. Repeat this process with the remaining rolls.
5. Remove the spring rolls from the fryer and allow to cool on a wire rack for 5 minutes before serving.
