Sweet Potato Soufflé

This savory holiday dish doesn’t have to drown in sugary toppings. You can now enjoy this healthy complement to chicken or turkey thanks to the air fryer.

1 sweet potato, baked and mashed

2 TB. unsalted butter, divided

1 large egg, separated

14 cup whole milk

12 tsp. kosher salt

1. Preheat the air fryer to 330°F.

2. In a medium bowl, combine the sweet potato, 1 tablespoon of melted butter, egg yolk, milk, and salt. Set aside.

3. In a separate medium bowl, whisk the egg white until stiff peaks form.

4. Using a spatula, gently fold the egg white into the sweet potato mixture.

5. Coat the inside of four 3-inch ramekins with the remaining 1 tablespoon of butter, then fill each ramekin halfway full. Place 2 ramekins in the fryer basket and cook for 15 minutes. Repeat this process with the remaining ramekins.

6. Remove the ramekins from the fryer and allow to cool on a wire rack for 10 minutes before serving.
