Parmesan Cauliflower Cakes

Cauliflower has become a trendy superfood. It’s low in calories and filled with nutrients, including some that might even help lower your risk of cancer.

2 cups cooked cauliflower

1 large egg, beaten

12 cup grated Parmesan cheese

1 TB. fresh chives, chopped

1 cup panko breadcrumbs

1. Preheat the air fryer to 390°F.

2. In a large bowl, combine the cauliflower, egg, Parmesan cheese, chives, and panko breadcrumbs, then use a potato masher to mash the ingredients, retaining a chunky texture.

3. Form the mixture into 6 round cakes, then spray both sides with nonstick cooking spray.

4. Spray the fryer basket with nonstick cooking spray, then place 3 cakes in the basket and cook for 8 minutes. Repeat this process with the remaining cakes.

5. Remove the cakes from the fryer and allow to cool on a wire rack for 5 minutes before serving.
