Beet Salad with Lemon & Chive Vinaigrette

Beets are one of the healthiest foods on the planet and high in antioxidants. If you’re unsure whether you’re a fan of beets, this will help convince you.

6 medium red and golden beets, peeled and sliced

1 tsp. olive oil

14 tsp. kosher salt

12 cup crumbled feta cheese

8 cups mixed greens

For the vinaigrette:

2 tsp. olive oil

2 TB. fresh chives, chopped

Juice of 1 lemon

1. Preheat the air fryer to 360°F.

2. In a large bowl, toss the beets, olive oil, and kosher salt.

3. Spray the fryer basket with nonstick cooking spray, then place the beets in the basket and cook for 12–15 minutes or until tender.

4. While the beets cook, make the vinaigrette in a large bowl by whisking together the olive oil, lemon juice, and chives.

5. Remove the beets from the fryer, toss in the vinaigrette, and allow to cool for 5 minutes. Add the feta and serve on top of the mixed greens.
