Corn Dog Bites
Small bites of hot dog surrounded by a thick corn batter will make kids—and adults—swoon for this healthier take on a carnival classic.
1⁄2 cup all-purpose flour
1⁄2 cup yellow cornmeal
1⁄2 tsp. baking powder
1⁄4 tsp. kosher salt
2 TB. buttery spread, melted
6 TB. low-fat milk
2 tsp. honey
1 hot dog, cut into 8 pieces
1. Preheat the air fryer to 390°F.
2. In a large bowl, combine the all-purpose flour, yellow cornmeal, baking powder, and kosher salt, then add the buttery spread, milk, and honey, stirring until it starts to form a ball of soft dough.
3. Divide the dough until you have 8 equal balls, then press each hot dog piece into a ball, making sure to completely encase the piece in the cornmeal dough. Repeat this process with the remaining dough and hot dog pieces.
4. Spray the fryer basket with nonstick cooking spray, then place 4–5 bites in the basket and cook for 6 minutes or until golden brown. Repeat this process with the remaining bites.
5. Remove the bites from the fryer and place on a wire rack. Serve warm.
