Apple Cider Fritters
These handheld fruit fritters are simply irresistible. Make a large batch and store them in the freezer to enjoy autumn flavors all winter—or all year—long.
1⁄2 cup apple cider
1⁄2 cup granulated sugar
2 TB. coconut oil, melted
1 large egg, beaten
1⁄4 cup buttermilk
1 cup all-purpose flour
3⁄4 cup whole wheat pastry flour
1 tsp. baking powder
3⁄4 tsp. ground cinnamon
1⁄8 tsp. ground nutmeg
1⁄4 tsp. kosher salt
1 small Gala apple, peeled and finely chopped
1 TB. confectioners’ sugar
1. Pour the apple cider into a small saucepan and bring to a boil, then reduce to a simmer and cook until reduced by half. Set aside to cool.
2. In a large bowl, whisk together the cider, granulated sugar, coconut oil, egg, and buttermilk. Stir in the all-purpose flour, whole wheat pastry flour, baking powder, ground cinnamon, ground nutmeg, and kosher salt, then fold in the chopped apple. Cover the bowl and refrigerate for 20 minutes.
3. Preheat the air fryer to 360°F.
4. Spray the air fryer baking pan with nonstick cooking spray, then place 4 individual tablespoons of dough in the pan and cook for 8 minutes or until puffy and golden brown. Repeat this process with the remaining dough.
5. Remove the fritters from the fryer and allow to cool on a wire rack for 10 minutes, then dust with the confectioners’ sugar before serving.
