Banana Muffins with Semisweet Chocolate Chips
These muffins certainly taste decadent, but natural sweetness from applesauce and banana mean less sugar in this recipe, but you won’t miss it.
1⁄2 cup all-purpose flour
1⁄2 cup whole wheat pastry flour
3⁄4 tsp. baking powder
1⁄4 tsp. baking soda
1⁄4 tsp. ground cinnamon
1⁄2 tsp. kosher salt
1⁄2 cup granulated sugar
1 large egg, beaten
1⁄4 cup canola oil
1 large banana, mashed
1⁄4 cup unsweetened applesauce
1 tsp. vanilla extract
1⁄3 cup semisweet chocolate chips
1. Preheat the air fryer to 330°F.
2. In a large bowl, combine the all-purpose flour, whole wheat pastry flour, baking powder, baking soda, ground cinnamon, and kosher salt. Set aside.
3. In a separate large bowl, combine the granulated sugar, egg, canola oil, banana, unsweetened applesauce, and vanilla extract.
4. Add the banana mixture to the flour mixture, stirring gently until combined, then fold in the chocolate chips.
5. Spray eight 3-inch ramekins with nonstick cooking spray, then pour equal amounts of the banana mixture into the ramekins.
6. Place 2–3 ramekins in the fryer basket and cook for 20 minutes or until a toothpick comes out clean when inserted in the middle. Repeat this process with the remaining ramekins.
7. Remove the ramekins from the fryer and allow to cool on a wire rack for 20 minutes before serving.
