Oatmeal Raisin Cookie Bars
Cookies meet oat bars in this dessert combination. These delectable treats are loaded with whole grain goodness but still taste sweet and delicious.
1⁄3 cup all-purpose flour
1⁄4 tsp. kosher salt
1⁄4 tsp. baking powder
1⁄4 tsp. ground cinnamon
1⁄4 cup light brown sugar, lightly packed
1⁄4 cup granulated sugar
1⁄2 cup canola oil
1 large egg
1 tsp. vanilla extract
11⁄3 cups quick-cook oats
1⁄3 cup raisins
1. Preheat the air fryer to 360°F.
2. In a large bowl, combine the all-purpose flour, kosher salt, baking powder, ground cinnamon, light brown sugar, granulated sugar, canola oil, egg, vanilla extract, quick-cook oats, and raisins.
3. Spray the air fryer baking pan with nonstick cooking spray, then pour the oat mixture into the pan and press down to evenly distribute. Cook for 15 minutes or until golden brown.
4. Remove from the fryer and allow to cool in the pan on a wire rack for 20 minutes before slicing and serving.
