Friends and family of all ages are sure to enjoy this festive outdoor meal on a hot summer day. A refreshing chilled gazpacho is enhanced with the bold flavors of sweet roasted red peppers. Salmon is gussied up with a ginger marinade. And grilled chicken (a second main course option) gets a lift from a tasty blend of Indian spices. We’ve also included a seasonal bounty of vitamin-rich veggies, in every color imaginable, including juicy tomatoes, crunchy radishes, and crisp cucumbers. And for dessert, there’s an old-fashioned cobbler made with blueberries, one of our favorite healthy fruits.

Simple tableware is best when it comes to dining outside. Keep it casual with colorful plastic or melamine plates and cups. You can roll up the silverware in oversized napkins and tie them with different-colored ribbons, then place the bundles in a pretty basket on your buffet, if you’d like.
