Sweet Potato Pie
A delicious and classic sweet potato pie in your Instant Pot!

Ingredients:

½ cup crushed graham crackers (about 7 graham crackers)

2 tablespoons unsalted butter, melted

½ cup brown sugar

1 large egg

1½ cups canned sweet potato purée

½ tsp cinnamon
-
½ tsp nutmeg

½ teaspoon sea salt

½ cup evaporated milk
-
1 cup water
Directions:
For crust: Mix the graham cracker & butter and mix until well combined. Press in the bottom & 1 inch up the sides of a springform pan. Set aside.
In a bowl, whisk egg, purée, spices, sugar, salt, and milk. Pour the filling into the prepared crust. Cover the pan with aluminum foil.
Put a trivet in the Pot & pour in the water. Lower the pan onto the trivet.
Lock the lid. Select the Manual mode. Set the time for 35 mins High Pressure.
When timer beeps, let the pressure release naturally for 10 minutes, then release the remaining pressure.
Unlock the lid. Remove the pan from the pot and then remove the foil. Allow the pie to cool. Cover with plastic wrap & place in fridge for at least 4 hrs. before serving.
