Exceptional hot chocolate starts with the finest chocolate. The high-quality stuff is worth the splurge, as the chocolate’s unique flavors will actually come through more with the addition of warm milk.
6 ounces semisweet chocolate, chopped into small pieces
⅓ cup unsweetened cocoa powder
6 cups whole milk, divided
½ teaspoon salt
¾ cup sugar, or to taste
Marshmallows or whipped cream for garnish
Makes 6 servings
In a small saucepan mix the chocolate, cocoa powder, and 2 cups of the milk over low heat. Stir continuously until the chocolate is completely melted. Add the remaining 4 cups of milk and the salt. Stir, allowing it to heat the rest of the way through. Stir in sugar to taste, and continue to heat until it is completely dissolved. Pour the hot chocolate into mugs and top with marshmallows or whipped cream, if desired.
MAKE IT AHEAD: Make this hot chocolate recipe up to a day in advance. Allow it to cool completely, store it in the refrigerator in an airtight container, and reheat it when ready to serve.
