This is my favorite margarita because it’s incredibly fresh and happens to be low calorie. It’s always a hit at parties, and I have written down the recipe countless times to send home with inquiring guests. Put out a tray with limes and salt so guests can rim their own glasses since some like more salt and others like less.
Kosher salt
Lime slices or wedges
1½ cups white tequila
¾ cup light agave syrup
¾ cup freshly squeezed lime juice (about 6 limes)
Makes 6 margaritas
1. To rim the glass, pour some kosher salt into a small dish. Rub 1 lime slice over half the rim of an Old Fashioned glass. Dip the rim of the glass into the salt, then fill the glass with ice. Repeat with additional glasses.
2. In a large cocktail shaker or Mason jar, combine the tequila, agave syrup, and lime juice. Fill with ice and shake well, then strain into prepared glasses. Garnish with a fresh lime slice.
Note: You can turn this margarita into a summer-friendly slushie by pureeing it in a blender with 2 cups of ice.
MAKE IT AHEAD: Slice and juice your limes a day in advance. Wait until just before guests arrive to mix the pitcher of margaritas.
