Coconut Cardamom Macadamia Butter (All Phases)

Makes about ¾ cup

“Luscious” is the only word for this nut butter. Great for any occasion; serve on apple slices or other fruit slices or with berries for a rich and delicious snack.

• 1 cup macadamia nuts (5 ounces)

• ¼ cup unsweetened coconut flakes (¾ ounce)

• ¼ teaspoon ground cardamom

• ½ teaspoon pure vanilla extract

Place nuts and coconut in the food processor and process until smooth, 3 to 5 minutes. The nuts will go from a coarse meal to a fine meal to a creamy nut butter. Just keep processing until you get a smooth butter. Add cardamom and vanilla and pulse until fully incorporated.

Variations

For Phases 2 and 3: Add 1 teaspoon honey.

Use other favorite spices in place of the cardamom or add other spices like cinnamon, nutmeg, or other sweet spices to enhance the flavor.

For a less expensive choice, use half macadamia nuts and half cashews.

Tip: This is best made at least a day ahead to allow flavors to mellow as they fully meld together.
