This nut butter acts as its own little snack package, like a bite-size PB&J. The lusciously creamy texture is sure to satisfy, and the sweetness of pears means you won’t miss sugary jam. Use as a dip for fruit, a spread for muffins or pancakes, or just eat as is for the ultimate one-bite snack.
• 2 pears, cored and diced
• 2 tablespoons water
• 1 teaspoon ground cinnamon
• 1 teaspoon pure vanilla extract
• 1 cup cashews
Place the pears and water in a pot and bring to a boil over medium heat. Cover, reduce the heat to low, and simmer for 5 to 8 minutes, or until the pears are soft. Stir in the cinnamon, vanilla, and cashews. Puree directly in the pot with an immersion blender until smooth. It may take a few minutes for the mixture to become smooth—just keep blending until it has the consistency of nut butter.
Transfer to a jar and store in the refrigerator for up to a week or more.
