Many of our readers have asked for dairy-free and vegan versions of our shakes. This one fits the bill. The creamy coconut and naturally sweet berries pair perfectly for a satisfying morning meal. Add a bit of ice and it converts into a soft-serve dessert!
• ¼ cup unsweetened canned coconut milk
• ¾ cup frozen berries (cherries, blueberries, or strawberries)
• 1 serving unsweetened, unflavored 100% whey protein powder or vegan protein powder (check the package nutritional info—1 serving should yield 22 g protein)
• 1 teaspoon pure vanilla extract
• 1½ tablespoons unsweetened almond butter
• ⅓ cup whole milk or unsweetened soy milk
Place all the ingredients in a high-speed blender or a wide-mouthed mason jar or cup that will fit an immersion blender without splashing. Blend until creamy.

Variations
For Dessert: Add about ⅓ cup ice cubes (or enough to reach desired consistency) before blending, then divide among two to four bowls. Serve as a soft-serve ice cream substitute.
For Phases 2 and 3: Substitute ½ cup frozen berries and 1 frozen banana for the ¾ cup berries. Reduce the almond butter to 1 tablespoon.
