Socca Pinwheels (All Phases)

The ultimate retro snack with a modern twist, these attractive little roll-ups are a great choice for potlucks, parties, or snack boxes. They may become your new go-to delicious finger food.

• 4 ounces sliced deli meat or smoked salmon

• 4 ounces deli-sliced cheese or spreadable goat cheese

• 2 Basic Socca Wraps (here)

• 2 ounces arugula or spinach, chopped (about 1 cup packed)

• 2 tablespoons Lemon Aioli (here)

• ¼ cup shredded carrots

Layer the meat and sliced cheese on the wraps, distributing them evenly between the two. Toss the arugula and carrots with the aioli and spread it evenly over the top of the sliced cheese.

Starting on one edge, roll the wrap into a log as tightly as you can. Cut the roll crosswise into ½-to 1-inch-thick slices (cut them on an angle for a nice presentation), leaving the end pieces a bit thicker to keep them from falling apart. (See photo insert here.)
