This classic Greek dressing is perfect for all your favorite summer salads. Its tangy lemon flavor also works well as a marinade for meats or tofu.
• 3 tablespoons fresh lemon juice (from 1 large lemon)
• 1 tablespoon red wine vinegar
• 1¼ teaspoons dried oregano
• ½ teaspoon salt
• ¼ teaspoon ground black pepper
• 3 cloves garlic
• 3 Kalamata olives, pitted
• ⅔ cup olive oil
Place all the ingredients in a wide-mouthed mason jar or cup that will fit an immersion blender without splashing. Blend, working the blender in the jar until the olives and garlic are in tiny pieces.
Place a lid on the jar. For best results, set aside for at least 1 hour to allow the flavors to develop. The dressing will keep in the refrigerator for 1 to 2 weeks.
