Spicy black peppercorns with creamy Parmesan and a bold burst of mustard liven up fresh greens, vegetables, or salads.
• 2 tablespoons brown mustard
• 2 tablespoons red wine vinegar
• 1 clove garlic
• 1 to 2 teaspoons whole black peppercorns
• 2 tablespoons grated Parmesan cheese
• ¾ cup olive oil
Combine all the ingredients in a wide-mouthed mason jar or cup that will fit an immersion blender without splashing. Blend, working the blender in the jar until garlic and peppercorns are coarsely ground.
Place a lid on the jar. For best results, set aside for at least 1 hour to allow the flavors to develop. The dressing will keep in the refrigerator for 1 to 2 weeks.
