This recipe is inspired by a Texas friend who always had the perfect salsa ready to go for any party using (shush) canned tomatoes! A shockingly first-rate salsa that adds a light, refreshing bite to any dish any time of year. Adjust the level of spiciness to fit your taste. Serve as a side sauce or as a seasoning in recipes like Slow Cooker Chili (here) or to spice up soups, beans, meats, vegetables, or grains.
• 2 or 3 cloves garlic
• 1 medium onion, cut into large chunks
• ½ to 1 cup packed cilantro, leaves and stems coarsely chopped (1 to 2 ounces)
• Juice of 1 lime
• 1 to 2 jalapeños or other chiles of your choice, or to taste
• ½ teaspoon salt
• 1 (14.5-ounce) can diced tomatoes
Place the garlic, onion, cilantro, lime juice, jalapeño, and salt in a food processor. Process until finely chopped.
Add the tomatoes. Pulse to a finely chopped salsa consistency.
Transfer to a glass mason jar with a lid. Store in the refrigerator for 2 to 3 weeks.
