Rich, creamy avocados make the perfect base for this versatile pudding. A hint of citrus lends a sophisticated flavor that both kids and adults will love.
• 2 ripe avocados, pitted and peeled
• ¼ cup unsweetened cocoa powder
• 2 tablespoons unsweetened soy or almond milk or whole milk
• 2 tablespoons pure maple syrup, or 2 dates, pitted
• 1 teaspoon pure vanilla extract
• 1 teaspoon orange or tangerine zest, or 1 drop food-grade orange essential oil
Place all the ingredients in a wide-mouthed mason jar or cup that will fit an immersion blender without splashing. Blend until smooth and creamy. Spoon the pudding evenly into four ramekins or small bowls.
Although this pudding can be eaten right away, it is better when placed in the refrigerator for at least 1 hour to allow the flavors to fully integrate before serving.
