Simple ingredients whip together to create a luscious, creamy topping everyone will love. Naturally vegan, this crème is so smooth that you’ll forget you started with whole nuts. Use it on top of fresh fruit, as a dip, or as an icing substitute.
• 1 cup raw cashews
• ½ cup boiling water
• 1 teaspoon pure vanilla extract
• 1 to 2 tablespoons pure maple syrup
Place all the ingredients in a blender. Blend until smooth and creamy. Set aside to cool before serving. Store in an airtight container in the refrigerator for up to 1 week.
Tip: This recipe works best in a high-powered blender or with an immersion blender. To make the process a bit easier, soften the cashews by soaking them overnight in ½ cup water. In this case, use the soaked cashews and any remaining soaking water in place of the raw cashews and boiling water.
