Poached Pears (All Phases)

Spicy poached pears bring any dinner to an elegant conclusion. Bask in the warm flavors of cinnamon, nutmeg, and red wine as you savor each bite.

• 4 medium pears, halved lengthwise and cored

• 4 to 6 dried plums or apricots (for Phases 2 and 3)

• ½ cup red wine

• ½ teaspoon ground cinnamon

• ¼ teaspoon freshly grated nutmeg

• Dash of salt

Arrange the pears cut-side up in a single layer in a shallow skillet with the dried fruit (if using) scattered around them. Pour the wine over the top so it covers the flesh of the pears. Sprinkle the spices over the fruit.

Bring to a boil over medium heat. Reduce the heat to medium-low, cover, and simmer for 10 to 15 minutes, or until the pears are soft. Remove from the heat. Serve warm.

Tip: Use a melon baller to core the pears and preserve as much of the flesh as possible.
