Roasted Turkey Breast with Crispy Bacon and Tomato

This is our answer to the classic club sandwich. We wanted a more rustic version. So we skipped the supermarket white-bread slices and went for the focaccia. It also tastes good on a crunchy brown bread.

Ingredients

100 g (3 ½ oz) bacon

3 tablespoons good-quality mayonnaise

2 tablespoons wholegrain dijon mustard

200 g (7 oz) Roasted Turkey Breast (see recipe), cut in thin slices

1 large, ripe Roma (plum) tomato, cut into 6 slices

salt and black pepper

2 handfuls baby-leaf lettuce

Method

In a pan, crisp up the bacon, and drain on egg cartons if you have any lying around (or use paper towels). Cut the bread in half and spread the mayo on one side, the mustard on the other. Layer the roasted turkey breast slices on top of the mayo. Place the tomato slices on top of the turkey breast, and season with salt and pepper. Layer over the bacon, and scatter with the baby-leaf lettuce. Cover with the mustard-coated slice of bread.
