Use the best-quality artisan baguette you can find because this deluxe flavorful preparation will glorify a good crusty bread, which can elevate a simple meal into something special. The garlic paste, which is easily made in a food processor, can be made ahead, so at mealtime you’ll only wait 3 or 4 minutes for this hot crusty treat. Cheesy Garlic Toast is also an excellent snack to serve with a glass of wine or a mug of hot cider.

About 12 peeled garlic cloves (one head)
½ cup extra-virgin olive oil
1 cup grated Pecorino Romano or Parmesan cheese
1 tablespoon chopped fresh parsley
1 teaspoon finely grated lemon zest
½ teaspoon crushed red pepper flakes
1 baguette
In a small saucepan on very low heat, cook the garlic cloves in the olive oil until they are soft and just golden, about 10 minutes. Be careful not to allow the garlic to brown too much or it could become bitter.
Place the garlic and oil in a food processor and whirl for 5 or 6 seconds. Add the cheese, parsley, lemon zest, and red pepper flakes and process for a few more seconds to make a rough paste.
Cut the baguette in half lengthwise and then in half crosswise. Arrange the 4 pieces of bread cut side down on an aluminum foil–lined baking sheet and broil for a couple of minutes until warm and golden. Flip the pieces over and spread the garlic paste on the cut side. Broil for a couple of minutes until bubbling and crusted on top. Slice into smaller pieces if you like and serve hot.
Serve with Pasta with Spinach and Apricots or Spring Greens and Vegetables with Shallot Vinaigrette. Cheesy Garlic Toast is a great accompaniment for soup, such as Roasted Fennel and Leek Tomato Soup, and it makes a terrific bar snack with a glass of red wine.
