A couple of simple additions give this easy grilled cheese sandwich a kick. With soup or salad, this is a good casual meal.
Yields 4 open-faced sandwiches

Prep time: 20 minutes
Broiling time: 5 to 8 minutes
½ teaspoon adobo sauce (from a can of chipotle peppers in adobo sauce), or more to taste
½ cup mayonnaise
4 slices whole wheat or other bread
1 cup shredded cheddar cheese
4 large tomato slices
Thinly sliced red onions
Chopped fresh cilantro (optional)
Turn the broiler on. Stir the adobo sauce into the mayonnaise and set aside. Put the slices of bread on a baking sheet. Spread each bread slice with the adobo mayonnaise. Sprinkle with cheese. Top with a tomato slice and some red onions.
Broil until the cheese is bubbling and the edges of the toast have browned, 5 to 8 minutes. Check after about 5 minutes and reposition the sandwiches, as necessary, for even browning. Remove from the pan. Sprinkle with cilantro, if you like, and serve immediately.
Substitute chopped scallions for the red onions.
