1. Place potatoes in a 4-quart saucepan over high heat and pour in enough water to cover potatoes; add 1 teaspoon salt.
2. When potatoes come to a boil, allow them to cook 5 minutes, then remove from heat.
3. Grate potatoes into a medium bowl using a box grater. Gently stir in grated onion and sprinkle on remaining salt and pepper; mix gently.
4. In a large sauté pan over medium-high heat, heat 1 tablespoon butter with 1 tablespoon oil. When butter is sizzling, add a heaping tablespoonful of potatoes and flatten slightly with a spatula.
5. Fry two or three tablespoonfuls at a time, depending on the size of pan. Cook 5 minutes or until crispy and golden brown, flip over with a spatula, and cook the other side until crispy. Add more oil and butter to the pan before cooking the next batch.
