ITALIAN SAUSAGE and PEPPERS with VODKA MARINARA

For a quick and dirty dinner with a spicy kick, this is your answer. Vegan sausage is widely available, so be sure to test out lots of varieties before arriving at your favorite.

1 medium red bell pepper, seeded and sliced

1 medium green bell pepper, seeded and sliced

1 medium onion, peeled and sliced

1 tablespoon oil

1 (14-ounce) package vegan Italian sausage

1 (6-ounce) package button mushrooms, chopped

1/2 cup vodka

6 cups marinara

1. In a large sauté pan over medium-high heat, sauté peppers and onions in 1 tablespoon oil. Cook until onions are translucent and tender, about 5 minutes. Remove from pan and set aside.

2. Add sausages to the same pan and cook until browned on all sides, adding oil if needed to prevent sticking. Remove from pan.

3. Add mushrooms to the pan and sauté until they begin to slightly brown, 5–7 minutes.

4. Pour vodka into pan and stir; cook about 1 minute.

5. Pour marinara over vodka and bring to a boil. Lower heat to medium and cook 10 minutes.

6. Add peppers, onions, and sausages back to pan and heat through, about 5 minutes.
