PIZZA ROLLS

Pizza toppings deep-fried in a wonton wrapper equal junk food bliss.

11/2 cups Super-Easy Pizza Sauce (see Chapter 4)

1 cup vegan pepperoni, finely chopped

1 cup vegan mozzarella shreds

1 (12-ounce) package vegan wonton wrappers

Oil (for frying)

1. In a large frying pan, heat about 2" oil to 360°F. Line a baking sheet with crumpled paper towels to drain cooked pizza rolls.

2. In a medium bowl, mix Super-Easy Pizza Sauce, pepperoni, and cheese.

3. Brush edges of wonton wrapper with water; place a scant teaspoon of pizza sauce mixture on wonton and fold over, pressing edge to seal completely.

4. Fry pizza rolls in oil on each side 2–3 minutes or until golden brown. Place on prepared baking sheet to drain.
