This recipe may seem highbrow, but it’s more about decadence. Splurge on some of the most buttery vegan crackers you can get your hands on, set out a plate of high-quality olives, and revel in the indulgence of it all!

1. Place walnuts in a medium sauté pan and toast over medium heat. Walnuts are done when they just begin to turn golden and smell fragrant. Remove from pan and set aside.
2. In the same pan, heat olive oil over medium-high heat and add onion and garlic. Cook about 10–15 minutes, stirring occasionally, allowing onions to caramelize.
3. Place walnuts, onion-garlic mixture, lentils, soy sauce, and balsamic vinegar into a food processor. Process until mostly smooth, adding 1/2 cup water a few tablespoons at a time until mixture can process freely.
4. Serve on a plate with a drizzle of olive oil on top and an assortment of crackers.
