GLAZED ORANGE LOAF

There’s lots of citrus bursting from this sticky glazed loaf, a perfect dessert after breakfast or dinner.

1 cup soy milk

Juice of 1 medium orange, divided

2 cups flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup sugar

1/3 cup vegetable oil

1/2 teaspoon vanilla extract

1 tablespoon orange zest

1 cup powdered sugar

1. Preheat oven to 350°F. Line a 9" × 5" loaf pan with parchment paper.

2. In a large bowl, combine soy milk and 1/2 of orange juice, set aside.

3. In a medium bowl, sift together flour, baking powder, baking soda, and salt.

4. To milk mixture, add sugar, oil, vanilla, and zest. Stir to combine. Add flour mixture half at a time to milk mixture, mixing to combine well, but don’t overmix.

5. Bake 40 minutes or until a toothpick comes out clean.

6. In a small bowl, mix remaining orange juice with powdered sugar and pour over loaf hot from the oven. Allow to cool completely before cutting.
