PEANUT BUTTER TRUFFLES

Another vegan variation on the classic flavors of Reese’s peanut butter cups, this time in truffle form for quick and simple inhalation! (These don’t last very long in my house.)


» MAKES 2 DOZEN TRUFFLES «

1 cup chunky peanut butter

2 tablespoons vegan butter

1 cup powdered sugar

1 (12-ounce) package vegan chocolate chips

1 tablespoon nonhydrogenated vegetable shortening

11/2 cups chopped nuts (almonds or pecans)

1. Line a baking sheet with waxed paper.

2. In a medium bowl, combine peanut butter, butter, and powdered sugar, stirring until very smooth.

3. Roll into 1" balls. Place on prepared baking sheet.

4. Melt chocolate and shortening in a medium heavy saucepan over medium-low heat, stirring constantly. Using two forks, dip balls into chocolate, turning to cover on all sides. Roll in nuts and set truffles on prepared baking sheet to allow chocolate to set.

5. Refrigerate leftovers.
