HAWAIIAN PINEAPPLE COCONUT BARS

When you enjoy these bars while wearing a lei, it increases the flavor exponentially! You know, really get in the spirit.


» MAKES 12–14 BARS «

1 (20-ounce) can pineapple chunks, drained and chopped

4 tablespoons cornstarch

1/2 cup sugar

1/2 cup vegan butter, melted

2 cups brown sugar

2 cups flaked coconut

2 cups flour

1 teaspoon salt

1. Preheat oven to 350°F. Line a 9" × 13" baking dish with parchment paper.

2. In a medium saucepan, combine pineapple, cornstarch, and sugar. Cook, stirring constantly, until mixture becomes thick; remove from heat.

3. In a medium bowl, mix butter and brown sugar. Add coconut, flour, and salt; mix until well combined.

4. Press half of coconut mixture into prepared baking dish. Bake 10 minutes.

5. Spread pineapple evenly over crust. Crumble the remainder of coconut mixture over pineapple and press lightly.

6. Bake 30 minutes or until top is golden brown. Cool completely before cutting into bars.
