S’MORES CHOCOLATE CHIP COOKIE BARS

Like a blondie with a s’mores topping, bars like these bake up fast and are best enjoyed while the marshmallows are still totally melty.


» MAKES 10–12 BARS «

2 tablespoons ground flaxseeds

1/4 cup water

1 cup plus 2 tablespoons vegan butter

1 cup sugar

1 cup packed brown sugar

1 teaspoon vanilla extract

21/2 cups flour

11/2 teaspoons baking soda

1 teaspoon salt

1/2 cup graham crackers, broken into 1" pieces

1/2 cup vegan semisweet chocolate chips

1 (2-ounce) package vegan mini marshmallows

1. Preheat oven to 350°F. Lightly grease a 9" × 9" baking dish.

2. In a small bowl, combine ground flaxseeds and water; set aside.

3. In a mixer, cream the butter, sugar, and brown sugar until fluffy. Add vanilla. Mix in flaxseed mixture.

4. In a medium bowl, sift together flour, baking soda, and salt. Add the flour mixture to the butter mixture and stir until completely combined.

5. Spoon dough into prepared baking dish and smooth top. Sprinkle with graham cracker pieces, chocolate chips, and marshmallows. Press into dough lightly.

6. Bake 30 minutes or until edges are golden brown and center is set.
