CHOCOLATE-CHOCOLATE CHIP BANANA BREAD

A banana bread for chocolate lovers—a real junk-foodie take on the classic.

11/4 cups sugar

1/2 cup oil

1 tablespoon ground flaxseeds

1/4 cup applesauce

2 cups mashed banana

1 teaspoon vanilla extract

2 cups flour

3/4 cup cocoa powder

11/2 teaspoons baking soda

1/2 teaspoon salt

1 (3-ounce) vegan chocolate bar, roughly chopped

1. Preheat oven to 350°F. Lightly grease a 9" × 5" loaf pan.

2. In a large bowl, mix together sugar, oil, flaxseeds, applesauce, banana, and vanilla.

3. In a medium bowl, sift together flour, cocoa powder, baking soda, and salt. Add to the banana mixture and stir until just combined; do not overmix. Fold in chopped chocolate.

4. Pour into prepared loaf pan.

5. Bake 50–60 minutes. Cool 10 minutes, then transfer to a wire rack. Cool completely before slicing.
