NO-BAKE OATMEAL ALMOND BUTTER BARS

An oat drop cookie held together with a caramel almond butter mixture—perfect for when you forgot to bake something but committed to bringing dessert!


» MAKES 8–10 BARS «

2 cups sugar

1/4 cup nondairy milk

1/2 cup vegan butter

1/2 cup almond butter

1 teaspoon vanilla extract

3 cups uncooked quick oats

1. Line a cookie sheet with parchment paper. Lightly grease an 8" × 8" baking dish.

2. In a large saucepan over high heat, bring sugar, milk, and butter to a boil; stir constantly 2 minutes. Remove from heat. Stir in almond butter and vanilla.

3. Place oats in a large bowl and pour sugar mixture over oats. Mix well so that all the oats are coated.

4. Press into prepared baking dish. Set aside to firm, about 1 hour.
