avocado-cilantro dip and dressing

You know that sauce that you find yourself putting on everything? Well, this is mine! Salads, tacos, sandwich spread, dip for veggies, dressing for slaw—my list could go on. Bright green, creamy, and not “light” feeling at all, this thick, dip-like dressing has avocado to thank for its rich flavor and creamy texture. To make a thinner, more pourable dressing, add 1 tablespoon water at a time until you reach the desired consistency. Keep this in your fridge and use it for anything.

1 ripe avocado, peeled

1/2 cup fresh cilantro leaves

6 tablespoons milk, unsweetened nondairy milk, or water

1 garlic clove, minced

3 tablespoons olive oil

11/2 tablespoons fresh lime juice

11/2 teaspoons red wine vinegar

1 teaspoon honey

1/4 teaspoon kosher salt

1/8 teaspoon black pepper

1 Place all the ingredients in a food processor or blender; process until smooth, about 30 seconds, stopping as needed to scrape down the sides.

2 Store in a jar or airtight container in the refrigerator for up to 1 week.
