Cream of Mushroom Soup
MAKES 1¼ CUPS (THE EQUIVALENT OF 1 “CAN” OF STORE-BOUGHT CONDENSED SOUP) • TOTAL TIME: 30 MINUTES
INGREDIENTS:
3 tablespoons unsalted butter
1 small shallot, minced (about ¼ cup)
½ cup minced cremini mushrooms
2½ tablespoons unbleached all-purpose flour
½ cup Vegetable Broth
½ cup whole milk
Pinch of kosher salt
⅛ teaspoon coarsely ground black pepper
DIRECTIONS:
- In a 10-inch skillet, melt the butter over medium heat. Add the shallot, stir, and sauté for 3 to 5 minutes, or until just soft. Add the mushrooms, stir, and cook for 2 to 3 minutes.
- Sprinkle in the flour and cook for a minute or two. While whisking, pour in the vegetable broth and whole milk and continue whisking until smooth.
- Simmer until thickened, 5 to 8 minutes, then season with salt and pepper.
