In a Saucepan
4 cups water
1⅓ cups quick-cooking (not instant) oats
1 apple, peeled, cored, and diced
¼ cup toasted wheat germ
¼ cup dried cranberries
¼ cup dried blueberries
8 dried apricots, chopped
1 teaspoon pumpkin pie spice
½ teaspoon salt
1 tablespoon unsalted raw or toasted sunflower seeds
Bring water to boil in large saucepan over medium-high heat. Stir in all ingredients except sunflower seeds. Reduce heat to medium-low and simmer, uncovered, stirring occasionally, until water is absorbed, about 10 minutes. Serve porridge sprinkled with sunflower seeds.
